Chocolate Chocolate Chip “Muffins” :)
Why, these look a bit familiar… They look strikingly similar to the chocolate cupcakes I filled with dulce de leche a while back.  Hmm.. How could that be?
Oh.  Because “chocolate muffins” don’t exist.  They’re just cupcakes that we eat for breakfast!  Oh, we’re so silly.  Oh well.  Whatever lets us get away with eating chocolate for breakfast, right?  :)
I got this recipe from The Ghirardelli Chocolate Cookbook that a lovely friend got for me a while back.  Warning: This book will make you salivate. 
For some reason, every one of the recipes I’ve tried from this book have ended in at least partial disaster… I must be doing something wrong.  Maybe I should stop being so frugal and start using Ghirardelli chocolate?   Hm.  Well, whatever it is, I hope I figure it out soon.  I love this book, and all of the recipes sound like they’d be amazing.  Then I mess up.  Darn.
Anyway.  Back to the cupca— I mean, “muffins.” 
My soul reason for making these muffins was to emulate the muffins that my former house-mates and I miss so much.  Our dining hall made some pretty decent food, but their chocolate chocolate chunk muffins were beyond delicious.  They were perfectly chocolatey, perfectly dark, perfectly moist, with perfectly crisp tops… I’m drooling just thinking about them.  The moment I get my fingers on that recipe, oh, there will be nonstop muffin-making and nonstop muffin-consumption in this apartment!  (Just kidding… maybe.)
These muffins were decent.  Honestly, they were just too dry and not quite chocolatey enough.  To be honest, I think I may have baked them a few minutes too long (instructions called for 20, I should’ve gone 17 for a more moist muffin).  I also must admit that I kind of strayed away from the recipe a bit … (don’t ask).  I should actually try the recipe some day just as is, too… Don’t know what came over me! 
I won’t give up on this muffin experiment until I succeed — even if it takes all summer!

Day 11 of 12: Browned Butter Blueberry Muffins :)
Putting that muffin pan to use again!
My brother asked me to make him some blueberry muffins as a part of my 12 Days of Baking.  I thought that blueberry muffins would be perfect for our Christmas breakfast, so that’s exactly what I did. :)
I perused a bunch of different blueberry muffin recipes online, on All Recipes and on the different baking blogs I follow.  I found this recipe, posted by Joy the Baker, to be the most appealing.  The muffins were pretty tasty, but a little on the doughy side, which is a given considering how thick the muffin batter was (I knew I should’ve added a little more milk while I could’ve).  I enjoyed the crumb topping and the taste of the muffin.  If I ever use this recipe again, I’ll definitely up the amount of milk.  In any case, these were a lovely little Christmas breakfast treat. :)
P.S. Notice how lovely the weather is outside?  It’s a bit windy and cold, but I’m loving the sunshine.  :)  It hardly looks like December outside; the only thing that’s keeping me convinced are the biting low temperatures.

Day 7 of 12: Pumpkin Muffins :)
So, I’ve kind of been slacking on updating my “12 Days of Cookies.”  Actually, I’ve been a complete bum about it.  It’s just, you see, I’ve been a little discouraged.  Discouraged, I say?  Why so?  Well, the other day, my camera died on me — while I was trying to capture the little goofy moments of my brother’s 22nd birthday.  I went into my mom’s room to look for the camera battery charger, but it was nowhere to be found. :(  I thought we had a spare charger at home, which is exactly why I didn’t bring mine home from school.  Now I’m in Portland and camera battery charger-less.  Of course, I can still use my phone to record the results of my baking spree, but the quality is just disgusting… I promise my food doesn’t look THAT bad.
Anyway.  Onto a few brighter notes…
Today’s Christmas!  Merry, merry Christmas, everybody!  I hope it’s full of lots of high quality, ridiculously delicious food — and even higher quality family time. :)
Because I’ve been slacking on my posting so much lately, I’m going to be doing a few speed posts today (to catch you up with all of my baking projects).  I’ve decided to change these “12 Days of Cookies” into “12 Days of Baking/Cooking.”  To be honest, making cookies was getting a little repetitive.  Don’t get me wrong, I love baking cookies; cookies are probably my favorite thing to bake.  But I thought I would stray off the cookie route and explore some other recipes I’ve been dying to try (my brother bought me a muffin pan when he got home, so I definitely had to incorporate that into my holiday baking).
Pumpkin muffins, the first thing I made in my new muffin pan. :)  I got this recipe from Smitten Kitchen.  These were pretty delicious.  So perfectly soft and fluffy, just the way I like my muffins.  I do wish these muffins were more pumpkin-y; I feel like the sugar just kind of overpowered everything else in this recipe.  But, toasted up or eaten at room temperature (or even cold), these pumpkin muffins make for a great breakfast bite. :)
